Cheesy Doritos Chicken Casserole: 3 cups cooked chicken, chopped 8 oz sour cream 1 can cream of mushroom soup 1 can cream of chicken soup 1 1/2 cups salsa or 1 can Rotel 1 can of corn, drained 2 cups Mexican cheese, shredded 1 bag of nacho cheese Doritos
Made this w 1 ground beef, added couple gloves minced garlic, a diced jalapeno, and chunked all of a small cabbage. Cooked for about 10 minutes on stove top, then transferred to a pam-sprayed casserole dish. Cover, baked about 25 more at 350 degrees. Uncovered, topped w 1 cup shredded cheese, and baked about 15 - 20 mins more. Pretty good - kind of a healthier alternative to a goolash-y dish.
