Buffalo Chicken Casserole 1 pound chicken 1 Tbl olive oil 1/8 tsp pepper 2 cups uncooked macaroni 2-10.5 oz cans cream of chicken soup 1-14.5 oz can chicken broth 1 c milk 8 oz cheddar cheese 1/2 c Hot Sauce 1 c celery, chopped 1/2 c onion, diced 2 cloves garlic, minced Directions: Preheat oven to 350 degrees. Bake chicken for 40-45. Cool and shred. Pour mixture into a 9x13 pan and bake uncovered at 350 degrees for 1 hour.
Beef Stroganoff for Two. I usually make this dish when we have a few ounces of cooked steak left over from another meal, but you can also use raw beef, following the directions in step 2. Serve over egg noodles. Fresh dill is a great garnish if you have it, but parsley is good too.
