Mozzarella, Tomato and Avocado Salad: 1 Container Cherry Tomatoes, Cut in Half, 1 Carton Fresh Mozzarella Cheese Pearls, Drained, 1 Avocado, Peeled and Diced, 1/3 Cup Basil, Julienned, 2 TBSP Fresh Parsley, 1/4 Cup Lemon Juice, 1/4 Cup Olive Oil, Salt, Pepper, Baguette-Optional. In a bowl, combine the tomatoes, mozzarella, basil, parsley, Set aside. In a bowl, whisk the lemon juice, oil, salt and pepper. Pour over mixture. Refrigerate for 1 hour. Fun Finger Foods - Cut 1 cm off the cherry tomatoes, remove the seeds. Fil w/ the tomatoe tapenade and finish w/a mini mozzarella ball. Put on a skewer. In a small bowl, mix the x virg olive oil, lemon zest & parsley. Roll the skewers in the oil, put in a serving vase or platter.
Chicken Avacado - now on my favorite recipe list! I did it a little differently. Dipped in flour, egg/milk mixture than ITALIAN bread crumbs. Lined baking sheet with tin foil and baked at 350 for about 10 min on each side. After chicken was cooked through, I added sauce, avocado and mozzarella/parmesan blend. Baked 5 more min. until melted. So good!! I skipped bread crumbs but loved this!
