Parmesan Tilapia- Holy cow, was this amazing. I usually do not like Tilapia but in this dish it was great (I think another fish would make it outstanding). My 23 month old son devoured it. I used a little bit too much green onion but other than than perfect. Will definitely make again. We paired it with wild rice and lemon roasted asparagus.
Oven Baked Blackened Tilapia from 101 Cooking For Two- Pairs great with tater sauce, although it was a bit spicy. I added 1 tsp of lemon pepper & 1 tsp of basil. Served with corn on the cob and broccoli. http://www.foodnetwork.com/recipes/aaron-mccargo-jr/big-daddys-blackened-tilapia-recipe.html
