Hash Brown Egg Nests with Avocado

Shredded hash browns and cheese nests baked until crispy topped with a baked eggs, crumbled bacon and more cheese. Served with chilled avocado slices. These were really good! Great for Christmas morning...throw them in the oven and forget about them!

Good egg/milk ratio, but would use at lease 1/2 & 1/2 cream if not heavy cream.

Cheddar Bacon Quiche

Breakfast cupcakes   20 oz hashbrowns  2 eggs,  4 TBSP flour  1 small onion chopped  1 C chopped ham  1 C mozzarella   1/2 C Parmesan   Salt  pepper  1 dz eggs, scrambled*     Oven 400 F spray muffin tin. Mix first eight ingredients. Fill muffin tin 1/3 full.  press mixture down in the middle and up the sides of each cup. Bake until golden brown,  25-30 minutes.
