Cini-minis from crescent roll dough (an old Southern Living recipe). These are quite possibly the BEST cinnamon rolls I've had!! A quick weekend breakfast treat. I used reduced fat crescent rolls... also was out of brown sugar, so mixed a bit of molasses with my white sugar. Baked mine in a round cake pan so the edges would stay soft. These were very quick and easy to make. My whole family loved them!!!
Yes, yes, and YES!!! These were amazingly delicious, and my family loved them so much they went FAST! Mexican Chicken Casserole. A Mexican chicken casserole recipe with chicken, taco sauce, and seasonings, along with taco chips and cheese. Ingredients: 4 boneless chicken breast halves, cooked, cubed 1 can tomatoes with green chilies 1 can cream of mushroom soup 1 can cream of chicken soup 1 can (4 ounces) taco sauce 1/2 cup chicken broth 1 package taco chips or Doritos 1/2 to 3/4 cup grated American cheese, Mexican blend, or Classic Melts blend Preparation: In a saucepan, combine and heat tomatoes, soups, taco sauce and broth. Line bottom of casserole dish with taco chips. Add mixture of chicken and sauce. Top with grated cheese. Bake at 350° until bubbly and hot. Serves 4.

Chill in the refrigerator for 30 minutes. Roll into balls. Store in an airtight container in the refrigerator for up to one week.

Creamy Grilled Chicken Piccata *Chicken* Juice of 1 lemon (3Tbsp) 3 Tbsp olive oil 1 Tbsp minced garlic 1 tsp salt 1/4 tsp black pepper 1/2 tsp basil or oregano 2 boneless, skinless chicken breasts *Pasta* 2 cups dried penne pasta 2 Tbsp butter Juice of 2 lemons (6 Tbsp) 1 Tbsp minced garlic 1/2 cup half and half (or heavy cream) 2 tsp dried basil 2 Tbps capers 1/2 cup grated parmesan cheese *Chicken Recipe* Combine first 6 ingredients and mix well. Place chicken in a ziplock bag and pour marinade over chicken. Marinate overnight in the refrigerator. When ready, grill until done. Allow chicken to rest for a few minutes and then slice into strips to serve over pasta. *Pasta Recipe* While chicken is grilling. Cook pasta according to directions (10-12 minutes). Reserve 1/2 cup of pasta water and drain. In same sauce pan, melt butter over medium heat. Whisk in garlic and lemon juice. Pour in half and half and whisk until hot. Add some salt and pepper to taste. Add the parmesan cheese, basil and capers, and heat until cheese is melted. Check the consistency of the sauce and add some of the reserved pasta water to loosen the sauce if necessary. Toss in pasta.
