Baked Chicken Meatballs - 1 lb ground chicken, or 2 boneless skinless chicken breasts cut into strips and pulsed in a food processor until ground, 1 small yellow onion, diced, 1 clove garlic, minced, 3 strips bacon, diced, 1 egg yolk, 1 tablespoon extra virgin olive oil, 2 tablespoons tomato sauce, 3 tablespoons chopped Italian parsley. Going to try it without the bacon, much healthier, but drier.

Chicken Parm Meatballs. Delicious. Amazing how much these tasted like a plate of chicken parmigiana. Super easy to put together, I left out fennel seeds and made my meatballs a little bit smaller (closer to golf ball size). Instructions say to bake for 15 minutes - mine took 25. Definitely a repeat dinner. ****1/2

Baked Mexican Chicken Meatballs~T~ I added some heat by using chipotle chile powder instead of plain. Also added some crushed red pepper to the sauce. I use ground turkey ( not extra lean ) Love these for a large gathering because you can make them ahead.
