Green Smoothie - 1 cup kale or collard greens firmly packed, stems removed, coarsely chopped (4 ounces) 1 Granny Smith apple, coarsely chopped 1 ripe banana 1/2 cup loosely packed fresh flat-leaf parsley leaves Combine kale, apple, banana, parsley, and 2 1/4 cups water in a blender; blend until smooth. If the mixture is too thick, add a little more water.
Baked Kale Chips. These are SO good. I make mine with a tiny bit of salt, freshly cracked black pepper, red pepper flakes, chili powder, and a little garlic powder. and top with a little fresh grated parm towards the end. It's impossible to eat just one of these. I literally can eat a whole bunch of kale in two days.
Spaghetti with Kale and Lemon. I make this without the parmesan and use Daiya vegan cheese and a bit of chili, and extra garlic, and it is delicious!
