Red Velvet Cheesecake; traditional red velvet cake uses NO food coloring; "red" was a reference to the warm mahogany tone naturally imparted by unprocessed, natural cocoa interacting with buttermilk and/or leaveners. Omit the red coloring! It leaves an artificial flavor.
