    Lemon and Feta Dip Recipe inspired by Bobby Flay: 1 sliced green onion, 1/4 cup extra virgin olive oil (plus extra virgin olive oil for brushing the pitas), 2 tsps grated lemon zest, 2 tbsps fresh lemon juice, 1 lb feta (crumbled), salt (taste), black pepper (taste), one garlic clove (pressed) Blend all ingredients except green onions in a food processor. Garnish dip with sliced green onions. Brush 6 pita breads (pocketless) with extra olive oil and toast lightly. Enjoy : )

    Sweet Paul's Lemon & Feta Dip 8oz feta cheese 1 T lemon zest
 2 T lemon juice
 1 clove garlic 6 T olive oil plus 2T for serving 
fresh thyme 1. Place feta, lemon zest and juice, garlic and olive oil in a blender or food processor and blend until smooth.
 2. Spoon into a bowl and drizzle with 2TB olive oil and sprinkle with fresh thyme. 
3. Serve in a bowl with a side of grilled tomatoes and grilled pita bread drizzled with olive oil, salt and thyme.
