this was fantastic, but it needed MORE of all the veggies, excluding the green onions and peas. I'm not sure about how to adjust the spice levels if adding more broccoli, cauliflower and tomatoes, but it really could have used more of those 3 ingredients.
Vegetable Paella:1 1/2 c rice; 4 c stock;1 c red pepper puree; Roast1 med eggplant/zucchini; 1 ea red/yellow/orange pepper strips; Sm pkg mushrooms;1 jar artichoke hts/water; green beans; Saute 4 cloves, minced garlic;1 onion; evoo; . Drizzle skillet evoo, sauté garlic/onions; add rice /puree,mix, flatten. Pour heated stock over, heat til liq reduces, cover/foil cook 40 min. Garnish.
Vegetarian!! Paella—a Spanish rice dish—is traditionally made with seafood, chicken or sausage, and a seasoning base of saffron and tomato. But in this vegetarian version, I'm swapping the meat and fish for fresh produce and legumes. It's a veggie-filled dinner perfect for any night of the week.
