Spinach-rich, vegetarian mexican lasagna. Next time, I'll dry the spinach a bit better and use a thicker brand of salsa. (I like Herdez salsa, but it is kinda watery.) I blended a jalapeno in with the spinach and it added a nice element. I used mozarella I had on hand instead of pepper jack.
