      Crock Pot Santa Fe Chicken Gina's Weight Watcher Recipes Servings: 8 servings • Size: 1 cup • Old Points: 3 pts • Points+: 4 pts Calories: 190 • Fat: 1.5 g • Fiber: 5.6 g • Carbs: 23.1 g • Protein: 21 g 24 oz (1 1/2) lbs chicken breast 14.4 oz can diced tomatoes with mild green chilies 15 oz can black beans 8 oz frozen corn 1/4 cup chopped fresh cilantro 14.4 oz can fat free chicken broth 3 scallions, chopped 1 tsp garlic powder 1 tsp onion powder 1 tsp cumin 1 tsp cayenne pepper (to taste) salt to taste Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot. Season chicken breast with salt and lay on top. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Adjust salt and seasoning. Serve over rice (extra pts)

In this simple yet flavorful dish, boneless skinless chicken thighs are stewed in the slow cooker with bell peppers, onions, garlic, tomatoes, olives, cilantro and spices. Served over rice, this is one tasty and inexpensive meal for 9 points plus!

    Loaded Turkey Santa Fe Baked Potato Skins (gluten free) only 2 pp per skin!! Gina adds she uses the filling with eggs for breakfast, on a toritlla for lunch, and used it to make enchiladas in the evening!! Uses the potato that is scooped out to make skinny garlic mashed potatoes the next day!!! Can't beat that!!

    1 lb chicken breasts 1 packet Italian dressing mix 2 Tbsp butter 1/4 cup lemon juice 1/4 cup chicken stock egg noodles or rice Place chicken breasts, Italian dressing mix, butter, lemon juice & chicken broth in the crockpot. Cook on low for 6-8 hours. When finished cooking, shred chicken with 2 forks. Serve chicken over egg noodles or rice and top with juices from crockpot.

    Chicken Taco Chili: great change from the everyday chili. Very low in fat and high in fiber. I used 2 lbs chicken breast, 2 pkg taco seasoning, 1T garlic, black pepper. I left out the chili peppers. Garnished with FF sour cream and fresh lime.
