** Shrimp Escabeche **  # Ingredients :  # 1. Shrimp  # 2. Shallots, chopped  # 3. Lime juice, fresh  # 4. Cilantro, finely chopped  # 5. Salt & pepper  # Directions :   # Poach shrimp until just pink. Mix in a bowl with lime juice,  shallots, cilantro, salt, and pepper. Allow to marinate for at  least one hour before serving.
