Broccoli and Italian Sausage Egg Muffins ~Preheat oven to 375 Brown 1 lb Italian Sausage. Remove from heat and stir in 1 C broccoli. Whisk 8 lg eggs, 1/4 C milk, 1/2 tbsp oil and 1/2 tsp baking powder. Season with salt and pepper. Spray cupcake pan. Spoon sausage and broccoli mixture evenly into each cup. Ladle egg mix over sausage. Sprinkle with Parmesan cheese. Bake for 15-20 minutes.

Healthy Banana-Blueberry Muffins--200 calories each. I changed a lot of this recipe actually; I had strawberries, so I used those instead of blueberries. I didn't have wheat germ on hand (who does?) so I used oatmeal instead (actually I used half a pack of instant oatmeal), and I used almond milk rather than 2%. They were so good! Excellent breakfast muffins with fruit and whole-wheat goodness.

Apparently the English tradition calls it Toad in a Hole, but we always referred to it as One Eyed Sanwiches. Grill youir slices of toast in butter, cut out a hole w/cookie cutter or rim of a glass, drop an egg in the hole. Let the egg cook in the toast & serve. Butter & toast the little square hole you punched out.
