Homemade Salsa 5-6 Roma tomatoes, chopped 1 Small onion, chopped 1/2 Cup fresh cilantro, chopped 2 Serrano or Jalapeño chiles, seeded and minced 1 Clove garlic, minced 2 Tbsp. freshly squeezed lime juice Salt and peper to taste. Add everything together and let sit overnight for flavors to meld.

Clean Eat Recipe: Egg Quiche Muffins
Clean Egg Muffins from He and She Eat Clean. I made it with 1 green pepper, 1 onion, and some leftover Easter ham. 11 egg whites and 4 whole eggs was almost too much. I'm going to have with salsa or maybe a little cheese on top. LOVE that my breakfast is made ahead of time. Can be frozen just make sure you take it out the night before to thaw.
