    Quinoa burrito bowls. I added a can of pintos and a red pepper, doubled the corn, and used extra lime and cilantro in the quinoa. These were easy and really light and fresh! I stuck with one cup of quinoa even though I basically doubled the rest of the recipe, and that was still more than enough for my liking.
