U EGG SALAD 2 hard boiled eggs chopped 2 small avocados 1 tbsp plain Greek yogurt(Chobani) 1 tablespoon fresh lemon juice 2 tablespoons chopped green onion 1/4 teaspoon Dijon mustard Salt and black pepper

Easy salad - made it for dinner last night but left out the Feta and added shrimp. Garbanzo beans, avocado, cilantro, green onion, lime juice, salt and pepper.

Hummus is so expensive to buy but SO easy to make! I personally don't like tahini at all and always omit it. Love all these varieties!

    if you don't like tahini, you can use peanut butter~ much cheaper, similar flavor

    you can make your own tahini, it's very expensive here. just get a pack of white sesame seed, raise, drain and fry them over low heat in a clean pan until golden brown. transfer into a processor and blitz it with a little olive oil added with a squeeze of lemon. you may omit the lemon and add it into the portion when needed. keep them in a glass jag and you can used them as a health salad dressing by adding more lemon juice to dilute it or spread on bread.

    It's O.K. but we would have preferred normal hummus or guacamole, we felt that it was sub par, compared.
