Boil potatoes for about 20 min until fork tender. Drain. Coat a rimmed cookie sheet well with olive oil. Place potatoes on cookie sheet and press with the bottom of a glass. Drizzle with more oil and salt and pepper to taste. Bake at 425 for 20- 30 minutes until slightly golden. Maybe add some onion powder, shredded cheddar cheese, and bacon bits to the top..
Crispy-Outside Creamy-Inside Garlic Herb Potatoes. Quite possibly the BEST POTATOES / SIDE DISH EVER. (Note from With a Dog by My Side pinner: Make sure you use baby potatoes and nothing larger, as the recipe might not turn out. I tried this with larger potatoes, and they fell apart. They were still really tasty, but they weren't something you could pick up with your hand.)
