Grilled romaine lettuce. Gotta be one the strangest sounding things, but it is DELICIOUS! Just rub the cut side of a washed head of romaine with some olive oil, and place it cut side down on the grill. As soon as the grill marks appear (and the lettuce just begins to wilt), remove it, put it on the plate (cut side up) and dress with some shaved parmesan cheese.
Caprese Pasta Salad 1 pound bow tie pasta, cooked according to package 1 cup cherry tomatoes, cut into fourths 1 cup fresh mozzarella, cubed 0.25 cup olive oil 2 Tablespoons balsamic vinegar 0.125 teaspoon salt 0.125 teaspoon pepper 2 teaspoons garlic, minced 12 fresh basil leaves, chopped 0.25 teaspoon dried oregano Directions: Combine all ingredients in a large bowl and serve.
