Vegan Raspberry Tapioca Pudding - I made this using Lite Coconut milk - I think I would use regular if I would were to make this again just to see if it adds a little more flavor. This is good, not super sweet, so very different from pudding I am use to. I would eat this for breakfast more than I would eat it as a dessert.
