I have this project going in my apartment, too. Save the base of a celery plant and re-grow it. For the first week simply leave the celery base in a bowl of water that has a lot of access to the Sun. Plant it in a pot after it starts sprouting. Takes a lot longer than green onions, but it's really pretty while it's growing!
