ultimate banana bread - america's test kitchen version. Requires 6 bananas, and microwaving to release juices, concentrating the juices, and adding banana slices to the top to caramelize while it bakes. Made this last week. It was so good. To make egg free I used one Ener-G egg and one flax egg. Had to make it nut free, but I definitely think pecans or walnuts would be yummy with it. I think next time I can reduce butter by half and replace with yogurt for a "healthier" option.

Press cookie dough over the muffin tins, bake and you have cookie dishes for ice cream! LOVE! Ingredients: 2 3/4 cups all-purpose flour 1 teaspoon salt 1 cup (2 sticks) unsalted butter, softened 1 1/2 cups granulated sugar 1 egg 1 1/2 teaspoons vanilla extract Easy-Add vanilla extract Add to shopping list vanilla extract 1/2 teaspoon No Color Almond Extract Easy-Add No Color Almond Extract Add to shopping list No Color Almond Extract Makes: 12 bowls. Instructions: Step 1 Preheat oven to 350°F. Spray the outside of each bowl cavity of Ice Cream Cookie Bowl Pan with vegetable pan spray. Step 2 In medium bowl, combine flour and salt. In large bowl, beat butter and sugar with electric mixer until light and fluffy. Beat in egg and extracts. Add flour mixture to butter mixture, 1 cup at a time, mixing after each addition. Step 3 Roll out dough on generously-floured surface to 1/8 in. thickness. Cut 4-1/2 in. circles from dough.. Drape one circle over each bowl cavity of pan, pressing to form smooth surface. Step 4 Bake 11-13 minutes or until cookie cups are firm and golden brown. Cool on pan on cooling rack 10 minutes. Loosen bottom edges of cookies from pan using small spatula. Carefully remove cups from pan and cool completely. Wash, dry and spray pan; repeat with remaining dough.

Chocolate Frosting Shots with Chocolate Mousse "Frosting" (can be use to top cakes) 1 can coconut milk 1/4 cup plus 1 T cocoa powder 1/2 tsp pure vanilla extract sweetener to taste (I used a little stevia, but any dry sweetener will do.) Open the coconut milk, and leave the can (or transfer to a bowl) uncovered in the fridge overnight. (Don’t shake the can before opening.) It should get very, very thick. (If it doesn’t, you’ve gotten a bad can that won’t work for the recipe. I highly recommend Thai Kitchen, or especially Thai Kitchen Organic.) Once thick, transfer to a bowl (you can opt to leave out the watery bit at the bottom of the can, if you want it even thicker) and whip in your cocoa, vanilla, and sweetener with a fork, or even beaters if you want to be fancy. (For the photos on this page, I didn’t use beaters. But I did pipe the mousse out using an icing tip.) strawberry santa hat Aren’t these Santa Hat Brownies just so cute? Thanks to Erica’s Sweet Tooth for the inspiration. I was looking for a fun and simple holiday treat and I ran across a recipe on her website. They’re so good and easy to make, especially since I bought Trader Joe’s Ready to Bake brownie mix (just pour the ready-made brownie batter in an 8X8 pan and bake for 22-25 minutes). I whipped up some vanilla-mascarpone buttercream to simulate the white trim on the hats. Voila! A festive dessert to get everyone into the spirit of the holidays. It really is beginning to look a lot like Christmas around here! Santa Hat Brownies Adapted from this recipe found on Erica’s Sweet Tooth Yields 12-16 brownies Ingredients: 1 pan of your favorite brownies, cooled and cut into desired size and shape (I used a round cutter) 12-16 small strawberries, cleaned and hulled vanilla-mascarpone buttercream (recipe below) Mascarpone Buttercream Ingredients: 1/2 cup (1 stick) unsalted butter, room temperature 8 ounces mascarpone cheese, room temperature 2-1/2 to 3 cups powdered sugar 2 teaspoons vanilla extract pinch of salt Method: Using a stand mixer with a paddle attachment, beat butter and mascarpone cheese until light and creamy, about 2 minutes. Add vanilla extract and salt. Add 2-1/2 cups of sugar, half a cup at a time and continue beating until smooth. Add more sugar, if needed to reach desired consistency and sweetness. To assemble, pipe a ring of vanilla buttercream on top of each brownie. Cut off the base of a strawberry so it is flat and place it upside down on each brownie, pushing slightly to secure in place.
