Tuscan Bean Soup from Pioneer Woman - I made it in the crock pot. Used chicken instead of shrimp, home canned tomatoes and dried basil instead of fresh. It was lacking something, so I added the rest of the can of tomato paste, a blob of chicken soup base and some poultry seasoning. It also needed the parmesan cheese at the end to keep it from "missing something".
Tuscan Bean Soup Recipe.. I plan to modify this to use in my Shrinking On A Budget Meal Plans. The recipe allows you to get a full serving of your healthy oil (olive oil) and is chock full of vitamins. Yum!
