Cheesy Beef and Zucchini Casserole. This was very tasty - like a lasagna but easier. :-) I used ground venison for the beef and only used two cups of cheese instead of three. Make sure to really squeeze out the zucchini - I didn't do such a good job and so it was a little juicy...but it was still fantastic - the juice was great for sopping up with bread. YUM. Great if you have a lot of zucchini to use up and are tired of zucchini bread. :-)
Vegetables Wellington Redux Recipe | Vegetarian Times note from reviewer: "Instead of tomato sauce, I roast cherry tomatoes with a little bit of olive oil, brown sugar, balsamic vinegar and oregano until they are reduced (40 min) I put that on the plate before the wellington. It is absolutely fabulous"
petite lasagna. i love the idea of lots of choices for main course foods. if they were small then everyone could have some of it all, ya know? and easily homemade in advance :) good idea? or crazy idea?
