Mango Lassi Homemade Popsicles

Gluten free • Serves 12


1 Mango, peeled and chopped (about 1 1/2 cups), ripe

Canned Goods

1 11.3 ounce can Mango nectar concentrate

Baking & Spices

1/4 tsp Cardamom, ground
1/2 cup Granulated sugar

Nuts & Seeds

1/2 cup Pistachios


1 1/3 cup Greek yogurt, THICK


1 tbsp Crystallized ginger

Is it just me, or can you drink like 8 mango lassis every time you go to Indian food also? I just love them. I had been wanting to make them at home for a while but, honestly, just didn't trust myself around them. I figured in popsicle format it might slow me down a bit? Eh...probably not.

Mango Lassi Pops -- 1 1/2 cans of mango pulp found at Indian grocery stores, 1/2 cup milk, 1 cup plain yogurt and pinch of ground cardamom. Mix ingredients in a blender and freeze in popsicle molds for a yummy, frozen treat.
