Healthier Oven Roasted Potatoes This roasted potato side dish, made with less olive oil and more fresh herbs than the original recipe, is a healthy hit with everyone.

Herbed Oven Roasted Potatoes. This was so good that 1/2 was gone before dinner started.

Easy oven roasted potatoes 2 large potatoes, scrubbed 3 Tbsp olive oil 1 Tbsp Italian Seasoning 1 tsp salt 4 Tbsp Parmesan cheese Slice potatoes into very thin slices (1/4 inch). big ziploc bag to coat the potatoes. Toss potatoes with olive oil, Italian seasoning and salt in a ziplock bag to coat. Place in a single layer on a baking sheet lined with foil. Bake at 450 for 15 -20 minutes, until lightly brown. Top with Parmesan cheese and bake an additional 5 minutes.

Oven Roasted Potatoes. I made these potatoes last night for my boyfriend and he loved them! I did not have bacon or fresh parsley so I used some cut up black forest ham and dried parsley and it was still delicious!

Cajun Chicken Pasta... On the lighter side mmmmm looks at those peppers and mushrooms... YUM!
