Angel hair pasta, roasted garlic and cherry tomatoes. 2 T olive oil 5 c cherry tomatoes 5 cloves garlic ¼ c white wine ¼ t salt 8 oz. pasta ½ c basil ¼ c Parmesan 400 degrees. Roast tomatoes, garlic, wine, salt in olive oil for 45 minutes. Cook pasta. Drain and add to tomatoes. Add basil and and toss. Shrimp option: Coat lb shrimp with 1 T olive oil and 1 T minced garlic. Over medium high heat. Add shrimp and cook until pink and cooked through, about 2 minutes per side.

Polenta: 1 cup coarse ground cornmeal 1 tsp salt 4 tbsp unsalted butter 1/4 tsp crushed red pepper flakes 1/2 cup grated Parmesan cheese Tomato-Basil Topping: 1 (28 oz) can whole and peeled San Marzano tomatoes 1 onion, peeled and sliced in half 4 tbsp unsalted butter Salt and crushed red pepper flakes, to taste 1/4 cup fresh basil, chopped Parmesan cheese for topping Polenta: 1. Place a rack in the upper third of the oven and preheat to 350 degrees F. 2. In an 8-by-8-inch baking sheet, or a two-quart baking dish, stir together four cups water, coarse cornmeal, and salt. The cornmeal will sink to the bottom of the pan and the water will turn a bit cloudy. Place in the oven to bake for 45 minutes. 3. Remove from the oven and add butter. Stir until butter is melted. Return to the oven to bake for an additional 15 minutes. 4. Polenta will have a dry top and not jiggle when fully baked. Remove from the oven and stir in red pepper flakes and cheese. Allow to cool for at least 15 minutes before serving. While the polenta bakes, prepare the tomato sauce. Tomato-Basil Topping: 1. In a medium saucepan combine entire can of tomatoes, juice and all. Add butter and onion halves. Keep the onion halves in tact; you’ll want to be able to easily remove the onion at the end of cooking. 2. Place the pan over medium heat. Bring to a simmer and cook for 40 minutes, stirring occasionally. The butter will melt and create glistening beads on top of the tomato sauce. The whole tomatoes will break down, but still maintain just a bit of their chunkiness. The sauce will thicken as it cooks down. 3. After the sauce has cooked down, remove the onion halves and discard. Assemble: Remove the sauce from heat and gently spoon onto cooked polenta. Top with fresh basil and Parmesan cheese. Serve warm.
