To celebrate Cinco De Mayo, or any day, enjoy these loaded nachos without the guilt. We had these for dinner but this is also great for lunch or as an appetizer. This recipe was inspired by Rocco Dispirito's new book, Now Eat This. I made some adjustments to his original recipe and it was DELICIOUS. Broccoli Crunch Salad -- I have some in my refrigerator right now, the last of it. It's my favorite next to a different slaw that has next to no dressing, has purple cabbage ( green works as well) tomatoes, celery, very fresh smelling.
CRAB SALAD in AVACODO HALVES.....1/2 c lump crab meat..1/2 tsp light mayo..1 T fresh cilantro chopped..1-2 jalapenos diced finely..2 tsp red onion diced finely..1 tsp lime zest..Juice from half lime..Sea salt & Fresh cracked pepper to taste..Dash of cumin..1 avacodoa cut in half and pitted.
