However, my timing was a bit off and by the time we actually got to eat it (my husband was late coming home) it tasted like bad, dry Chinese food. So, don't cook it too long, check it every hour or so and when the sauce is nice and creamy and a LITTLE sticky, EAT!
Crockpot Thai Chicken: 2 1/2 lbs of boneless, skinless chicken breasts 1 cup hot salsa 2 Tbsp lime juice 1/4 cup natural peanut butter 1 Tbsp low-sodium soy sauce 1 tsp minced ginger Place chicken breasts into a crockpot. Mix all remaining ingredients together and then pour mixture on top of chicken. Cover and cook on low 8-9 hours.
