Skinny Chicken Enchiladas – to make it FODMAP friendly, omit garlic & onion, replace oil w/ garlic infused olive oil. Instead of rolling in tortillas, put chicken mixture in a baking dish, top with enchilada sauce and cheese, serve over rice.
Weight Watchers Cheesy Chili-Mac I made this and loved it. The only hard part was eating just one portion. Think next time I will freeze into several small batches so there is never a huge bowl of it in my fridge.
