    switch the wheat flour for sorghum and brown rice flour and away you go...maybe throw in a few Tbsp of xanthum/guar gum Update: They worked very well with the substitutions but next time I'm going to double the flax and not use rice bran and since the gluten free dough is more fragile I'm going to make two half size "sandwiches" so the dough doesnt crack as much from being moved! ENJOY
