With spinach, cilantro, lime and cucumber, this quinoa salad is very green! Should have called it the "green-wah" salad. I enjoy it for lunch and it works great with chicken, fish or a burger. It's also gluten-free and high in protein. Perfect picnic food too. Add a little diced avocado for more green!
