- Za 1 kg. mesa - najviše 150 g. pirinča, znači oko 15% od količine mesa, tako da možete korigovati količinu u zavisnosti koliko mesa imate - 3 češnja belog luka sitno seckanog - 1 jaje - ja najčešće dodam i oko 100 g. polusušenog mesa od domaćih kobasica ali možete dodati i sitno seckano suvo meso ili sušenu slaninicu. - so, sveže mleveni biber, crvena paprike u prahu, pola ljute, pola slatke, ako imate manju decu ne dodajete ljutu, po želji kašikica vegete - 2,5 dcl. paradajz soka i vode toliko da bude oko 3 prsta iznad sarmi - malo sušenog mesa, slanine ili kobasice za staviti odgore - listova kupusa za oko 15 do 20 sarmi, zavisi koju veličinu želite Ove na fotografiji nisu ogromne kako se možda čini zbog male dubine u sredini tanjira, obično dobijem oko dvadesetak sarmi od ove količine Ja u sarmu nikada ne dodajem crveni luk i nikada ne dinstam meso. Sarma se kod nas oduvek pravila od smese kao za kobasice i to bi mi bilo kao da stavljam crveni luk u kobasice. Ali sve je stvar ukusa, neko voli i drugačije. - za zapršku 5 kašika ulja 2 kašike brašna 1 kašikica paprike Priprema Sve sastojke za punjenje izmešati tek toliko da se sjedine, nemojte previše dugo mešati i gnječiti meso. Listove sarme očistiti od zadebljanja pri kraju i zavijati sarmice. Na dno šerpe staviti manje ili iskidane listove pa ređati sarme. Zaliti sokom od paradajza i vodom, staviti gore ono što želite, suvo meso, slaninu, kobasice..., poklopiti i kuvati na tihoj vatri oko 2,5 do 3 sata, zavisi od kupusa. Na kraju propržiti brašno na vrelom ulju, dodati papriku, zapržiti sarmu i krčkati još desetak minuta i sarma je gotova.

Sastojci 500 g. pilećih fileta 250 g. mariniranih sitnih šampinjona 3 kašikice senfa 200 g. kisele pavlake 5 dcl. vode 1 maggi kocka za juneću supu ili začin po želji so, biber malo timijana, nekoliko iglica svežeg ruzmarina ulje, kockica maslaca 1 veći ljubičasti luk 1 češanj belog luka Priprema na vrelom ulju i kockici maslaca propeći pileetinu sečenu na kockice. Peći na većoj temperaturi nekoliko minuta da komadići mesa dobiju malo boju. Izvaditi meso i na istom ulju izdinstati sitno sečen luk i beli luk. Dinstati deseta minuta, dok luk ne postane staklast, vratiti meso, dodati začine, zaliti junećim temeljcem i kuvati na umerenoj temperaturi oko 25 minuta. Dodati šampinjone i senf, dinstati još oko 10 minuta, skoniti sa vatre i umešati pavlaku. Služiti uz pire krompir, pirinač, povrće...po želji.

Chicken Breasts with Mushroom Cream Sauce Recipe

One of the recipes that we watched Julie Powell prepare in the movie, Julie & Julia, was Chicken Supremes in Mushroom Cream Sauce. Butter, and mushrooms and heavy cream – oh my! It looked wonderful in the movie; I could almost smell the aroma wafting off of the screen. This recipe was definitely one that I wanted to make from “Mastering the Art of French Cooking”, by Julia Child. I served it for dinner Thursday night – and let’s just say I was quite tempted to lick the remaining sauce directly from the pan! I have adjusted the original recipe, omitting the cream and 1 tablespoon of the butter. This is definitely a “keeper”! Ingredients: 4 Tbls. Butter 2 Tbls. White onion, finely chopped ¼ lb. fresh mushrooms, sliced (I used 3 large caps and didn’t bother measuring) 4 chicken breasts, boneless/skinless (Julia refers to these as “Supremes”) Lemon juice Salt & White Pepper Butter for one side of wax paper circle ¼ cup chicken broth ¼ dry white vermouth (you could also use white wine) ½ cup milk 2 Tbls. Flour 2 Tbls. Fresh parsley, chopped Dash lemon juice Directions: Heat oven to 400 degrees. Cut a wax paper circle that will fit inside the casserole you choose; butter one side of it. On top of stove; melt butter in a covered casserole/pot that has a lid and can be placed in the oven. Add onions; cook for about 1 minute. Add sliced mushroom; cook for about 1 or 2 minutes, but don’t brown. Rub the chicken breasts with lemon juice and season both sides with salt and white pepper. Place chicken breasts in the casserole and turn in the butter, coating both sides. Place wax paper circle (butter side down) on top of chicken. Cover the pan and place in oven. Julia Child says to cook the chicken for 6 – 8 minutes. I removed the pan from the oven after 6 ½ minutes. The breasts were not quite done. I did end up placing them back in for another 1 ½ minutes. Remove the pan from the oven. Remove the wax paper circle and place the chicken on a serving plate. Place pan on stove and turn heat on medium. Bring the mushrooms and butter to a “sizzle”. Add the flour and stir for a minute to “cook” the flour. Add the chicken broth and vermouth; whisking until well combined. Add the milk and whisk. ½ cup was plenty for my sauce… you can always add a little more if necessary. Finish off with a few drops of lemon juice and the fresh chopped parsley. Serve the chicken with a serving of the mushroom cream sauce on top. Sit back and wait for the accolades. This one is out of this world! Click here for printable version of this recipe.

Imala sam dve kese za pečenje mesa i potpuno sam zaboravila na njih, dok sasvim slučajno ih ne videh u ostavi...znajući koliko je meso sočno iz njih odluka je pala da pečem piletinu u njoj.  Sastojci:      2 do 3 pileća batka po osobi ( može i cela kokoška )      limun sok i naribana korica      4-5 čena pasiranog belog luka      nekoliko grančica majčine dušice      2 kašike maslinovog ulja      5-6 listova sitno iseckane kadulje      1 kašičica vegetinog začina za piletinu      pola kašičice mlevene dimljene paprike      po ukusu biber Priprema: Piletinu oprati i osušiti ali joj ne skidati kožicu.Odstraniti višak masnoće. U veću činiju staviti piletinu,preliti sa limunovim sokom i maslinovim uljem,posuti sa narendanom limunovom koricom i sitno iseckanim začinskim biljem, povegetiti,dodati crvenu dimljenu mlevenu papriku i pobiberiti po ukusu i sve dobro izmešati. Otvoriti kesu za pečenje i staviti piletnu u nju, ako ima bilo kakvog soka ili začina u zdeli,sipajte i to u kesu. Zatvorite kesu gore sa nekim kuhinjskim koncem, ( ovde dođe zajedno sa kesom,ne znam kako bih prevela na srpski ) i sa iglom gore, blizu gde ste zavezali kesu, izbosti na nekoliko mesta. Staviti kesu u vatrostalnu posudu u kojoj ćete peći i sve zajedno staviti u frižider najmanje nekoliko sati, da se meso marinira. Uključiti rernu na 185*C i peći piletinu oko sat vremena.( u zavisnosti od veličine i starosti piletine,možda će trebati manje ) Pečenu piletinu izvaditi napolje iz rerne, pažljivo raseći kesu sa makazama po sredini ( pazite da vas para iz kese ne ispeče ),izvaditi komade mesa a sok  koji je ostao u kesi,preliti preko piletine. Poslužiti toplu sa nekim prilogom i salatom po izboru.( kod nas je bila kupus salata i pečeni krompir sa povrćem ) Sveže začinsko bilje možete dodavati i oduzimati po vašem izboru i ukusu. Jednom davno sam pekla dva parčeta jagnjetine, jedno u ovoj kesi,jedno bez...meso koje se peklo u kesi je bilo mnogo mekše i sočnije. Prednost pečenja na ovaj način je da ne morate da ribate posudu u kojoj ste pekli,skupiti kesu i baciti u đubre. Prijatno!!!!!
