    Portabella mushroom pizzas: 4 tomatoes, 4 lg portobello mushrooms, 4 cloves garlic, lemon, 1 leek, 1 onion, fresh basil, parmesan cheese, parsley, olive oil, salt. Heat 2 Tbsp oil, chop & cook onion til slightly brown. Chop tomato, garlic & leek, add to onions w pinch salt & saute til tomatoes soft. Squeeze 1 Tbsp lemon juice over mix. Add basil. Grease sheet, place mushrooms bottom side up. Add mix from sauce pan into each mushroom, top w parmesan cheese. Bake 12 min at 400F, top w parsley.
