Greek Marinated Chicken-Yummy! Had it for dinner, then cut it up and put the leftovers on my lunch salad. Just as good cold! I will add a little less lemon next time. This one is definitely going in the rotation!
Roast Chicken in a Bundt Pan! It's genius I tell you! Use your Bundt pan to roast chicken that's crispy all the way around. Place carrots, onions, and potatoes in the pan and then place the chicken, cavity side down, over the center. Season as usual and place pan on a cookie sheet to catch drips. Roast at 400 degrees for 15 minutes per pound plus 15 minutes.
Mushroom Asiago Chicken - Gourmet meal that's on your table in 30 minutes. The result was this dish and it's superb. If you don't have fresh thyme. I'd suggest using 1/2 tsp dried in it's place. And if you cannot find Asiago cheese. Romano or Parmesan is a decent substitute.
