      Apple Muffins | The Girl Who Ate Everything Need: 2 C sugar (use 1 1/2 C for a less sweet muffin); 2 eggs; 1 C oil (or sub unsweetened applesauce); 1 Tbsp vanilla; 3 C flour (AP or 1/2 wheat); 1 tsp salt; 1 tsp baking soda; 1+ tsp cinnamon; 3 C peeled, cored, diced apples (around 3 apples); Brown sugar for topping (around 1/2 cup).

      Easy moist apple muffins. Just made these, they are pretty tasty! I adjusted the topping a little. I did 1 cup brown sugar, 1/2 cup flour, 2 Tbsp softened butter, 1/2 tsp cinnamon, and used a fork to squish it all together. I also added some pear, or apple butter to make the mixture less dry. I made 12 muffins, and 20 mini muffins with this mix.

      Apple Muffins. I use a quick apple puree (with a little butter and orange juice) in place of the oil, 2.5 cups flour and 1/2 cup oatmeal run through the food processor, a little less sugar than called for, and a couple handfuls of fresh walnuts run through the processor. And I skipped the brown sugar on top. Breakfast for the next week and a half. Yum!

    Apple Coleslaw Mix the dressing and honey in large bowl. Add the coleslaw and apples and mix together. The mixture might seem dry but it will be plenty once the mixture has chilled in the fridge since the cabbage will release some liquid. Salt and pepper to taste.     Blueberry Streusel Muffins Looks great. I will use parts of this recipe and the low fat banana recipe for the base and then add blueberries and strussel topping.

    Blueberry Oat Muffins - Vegan recipe - Wheat-free Gluten-Free - Changed them up quite a bit to make a yummy chocolate chip muffin...substituted chocolate chunks (will use mini chips next time) for blueberries, soaked oats in vanilla coconut milk, used egg replacer, used better batter instead of rice/sorghum flour and xanthan gum, doubled oats in topping, baked at 400 for 20 min.
