Egg Spinach Quiche Cups:10 ozs. frozen chopped spinach, 3/4 cup egg whts, 3/4 cup shredded fat free cheese, 1/4 cup red bell pepper, chopped 1/4 cup onion, chopped fine hot sauce (optional) Microwave the spinach on high 2 1/2 mins. Drain completely. Line a 12 cup muffin tray w/foil baking cups. Spray the cups w/cooking spray. Combine the egg whts, cheese, mushrooms, spinach & onions in a bowl. Add hot pepper 2 taste. Divide evenly among the cups. Bake at 350, 25mins. Makes 12 muffins 75 cal ea.
Skinny Pina Colada 2 oz Barcardi Rock Coconut Rum 5 oz coconut water 2 oz pineapple juice Directions: Combine ingredients in a cocktail shaker with ice. Shake and strain into a glass filled with ice. Garnish with a slice of pineapple and/or a Maraschino cherry (optional). Drink and enjoy!

NA strawberry daiquiri mix Directions: Place rum and pina colada mix in blender with ice. Blend until smooth.Pour into a tall glass and top with the strawberry daquiri mix. The fruit sits on top to make it pretty :) If only I had a blender
