Persian Quince Jam. I have to confess I did this a little differently. I took the lid off the pot (the colours in my teatowel ran) and boiled it up till it got jammy. I also mashed up the fruit as it didn't break up by itself. Maybe I should have left it so it looked like the pic. I substituted vanilla extract for the rosewater. Not a huge change and it's a lovely jam.
