Clean Eating Pumpkin Spice Protein Bars (Makes 15 bars) Ingredients 1 1/2 cups quick oats (the 3 minute kind) 1 cup peanut butter (I use creamy) 1/2 cup honey 1/2 cup pumpkin (I used canned and organic) 1/2 cup apple sauce (unsweetened) 1 cup whey protein powder 2 tbsp. pumpkin pie spice (no sugar added) Directions Preheat oven to 350 degrees F. Step 1 – Roast your oats for 10-15 minutes on a cookie sheet (Or until they turn a nice golden brown). Remove from oven and allow to cool completely. Step 2 – Mix all ingredients in a bowl. Step 3 – Spread dough to 1/2 inch thickness in a baking dish or 1/2 sized cookie sheet. Step 4 – Bake for 20 minutes or until the dough has a nice golden brown appearance. Step 5 – Allow to cool. Slice into bars and store in a Tupperware container or Ziploc bag.

By Jean Nick: All it takes is a few minutes, and a food processor, to brew up a batch of homemade energy bars. *Mostly Raw Oatmeal Energy Bars: The only cooking involved is heating the wet ingredients to make them smoother and easier to blend with the dry ingredients. The end result is similar to Clif Bars. Makes 12 bars. *Ingredients: 2 cups old-fashioned oatmeal, uncooked ¼ cup flaxseed meal 1 cup total dried fruit (coarsely chopped), chopped nuts, and/or semisweet chocolate chips ¼ teaspoon ground cinnamon 1/8 teaspoon salt 1 cup natural nut or seed butter (peanut, sunflower, cashew, almond, tahini) ½ cup brown rice syrup 1 teaspoon vanilla extract. *Directions: Combine the dry ingredients in a bowl. Put the nut or seed butter and the syrup in a saucepan and heat slowly, stirring until the mixture is hot and well blended; then add the vanilla. Pour the mixture over the dry ingredients, and stir until well mixed (you may need to use your hand). Pack firmly into a greased 9-x-9-inch baking pan. Chill for a couple of hours until firm, then cut into 12 squares, and wrap each bar in wax paper. Stored in an airtight container, these will keep at room temperature for a month. *ChocoBean Power Bars: The cooked beans in this recipe add lots of protein and fiber without overpowering the banana and chocolate flavors. If you buy canned beans, there is no cooking involved. Just buy Eden Organic brand, which uses cans that aren't lined with the toxic chemical bisphenol A. Makes 12 bars

Very Similar receipe to bars I make! Instead of using banana, maple syrup or Vanilla, I replace with about a 1/2 cup of unsweetned vanilla almond Milk. These bars are very easily modified, just match your dry to wets and make sure not to make the "dough" Isn't too wet before pressing between sheets!
Vegan No-Bake Peanut Butter Chocolate Chip Protein Bars I made these today. I used goji berries, dark choc. chunks, and agave syrup. I needed to add 1/8-1/4 cup extra oats due to stickiness. I used 1 scoop chocolate and 2 scoops strawberry protein powder. Sat in the fridge a couple of hours before slicing. Tasty and will make again.
