7 WW pts+ for an 8th Preheat Oven to 350. Brown 1 lb turkey and drain if needed. Add 10 oz enchilada sauce and 8 oz tomato sauce to turkey and mix well. Cut 5 biscuits into 4ths and stir into mixture. Dump into greased 9x13 pan. Bake for 25 minutes. Top with 1 cup cheese and bake an additional 10 minutes. * Bubble up pizza. Super yummy! We used generic biscuits, but you could also use homemade biscuits. Also used reduced-fat cheese and turkey pepperoni. Next time may try Italian sausage or ground turkey or chicken Italian sausage instead of beef. For leftovers, heat up cookie sheet in while oven is preheating to 450; add pizza and warm for 10 min
Bubble up enchiladas--This is absolutely delicious. I used ground beef in mine, but you could easily do this with shredded chicken or pork. Was super easy to throw together. The only problem I had with it was my own kitchen-fail: I had my oven rack set too low, so some of my biscuit dough didn't cook. Lesson learned!
