Pickle Pasta Salad -- different, some people really liked, others just ok. I quadrupled the recipe for a party. Would try again with less pickle.
Slightly healthier ramen noodles. May have to make this sometime just for old times sake. (Could also use udon probably for less calories.)
There is a vegetarian instant noodles that are out at the market, should be good with that if your making this with instant noodles.

Lentil Loaf! Way more delicious than its name would suggest, and preparation is a breeze. We don't need no stinkin' meat.
I used to do this with almost all the same ingredients but applesauce. I used flaxseed whipped in a blender with water as a binder. Sometimes tofu blended with water if I didnt have flaxseed.
Canned pumpkin might work well or mashed sweet potato.
