heirloom tomato caprese sandwiches

1 pint cherry tomatoes, halved 8 ounces fresh “mini” mozzerella pearls 4 tablespoons olive oil 18 basil leaves, chopped 1/2 teaspoon Kosher salt 1/2 teaspoon freshly ground pepper

♥ Caprese: Take a whole tomato and cut slices into it (about 1/4″ thick) without cutting all the way thru the other side. Insert a slice of fresh mozzarella cheese and a basil leaf in between each slice. Once the tomato is stuffed (it should “fan” out a bit) drizzle olive oil and balsamic vinegar over the top. Drizzle it with your favorite sea salt – and voila! An update to everyone’s favorite caprese salad!

I love a good balsamic reduction on just about anything, but this looks absolutely delicious! @amy

Fun Finger Foods - Cut 1 cm off the cherry tomatoes, remove the seeds. Fil w/ the tomatoe tapenade and finish w/a mini mozzarella ball. Put on a skewer. In a small bowl, mix the x virg olive oil, lemon zest & parsley. Roll the skewers in the oil, put in a serving vase or platter.

Caprese Dip...Mozzarella, tomatoes and fresh basil. So simple yet so brilliant

APPETIZER - 'Caprese' Tower - layers of mozzarella & tomatoes topped with basil. I would probably add a thin layer of pesto in between each layer or just a dollop on to top.

When I make these, I don't cut the tomatoes in half and I buy the mini ball mozzarella to make it VERY easy. I use slightly longer skewers and put them in a martini glass rather than on a plate. Sooo cute and DELICIOUS!!!!

Not all tomatoes are red, and not all carrots are orange!

You know what's even better than Caprese Salad? Steak Caprese!

Dried Cherry Tomatoes Just cut them in half, place on a baking tray, pour over olive oil mixed with your favourite spices and herbs, and dry them in the oven until they reach the desired level of dryness. Let them cool down and enjoy!

punched up caprese kabobs--totellini, pepers, grape tomatoes, basil and I would add a little cheese:) Maybe for Kyle Fischer baby shower?!
