Grainographic by goodeggs: Some grains have been partially cooked or prepped before you buy them, which can affect how much water you’ll need, as well as the cooking method. Couscous (which isn’t actually a grain, but feels like part of the family) is typically “quick-cooking,” having been pre-steamed and dried. And, just like personal preferences, every grain is a little bit different, so always adjust water as needed so it’s to your liking. #Grains #Cooking #Infographic
QUICK SOAK - simmer beans 15 min before soaking to soften beans (& required at high altitude). GINGER - soak beans with ginger is proven to eliminate a major portion of the gas. SALT - do NOT add until serving. it toughtens the beans and prevents water absorption which increases cooking time.
