CROCKPOT MAC CHEESE --- 8 ounces medium shell macaroni, 2 teaspoons olive oil, 1 cup evaporated milk, 1/2 cup milk, 1/2 teaspoon salt, 1/4 teaspoon ground black pepper, 2 cups sharp Cheddar cheese or a Cheddar blend, 4 tablespoons butter, melted. 1 c quinoa, well rinsed 1 1/2 c water 2 c broccoli, chopped 1 c shredded cheddar S to taste Bring quinoa and broccoli to a boil over med heat, reduce to simmer covered until quinoa is tender, ~13-17 min. Mix in the cheese, let it melt and season with salt and pepper.
