mini corn dog muffins. Instead of making the cornbread, I just used a package of cheap Jiffy cornbread mix. It made it a super quick meal! Also, I would use a smaller muffin pan, otherwise the cornbread/hot dog ratio is a bit off. Still tasty either way!

Baked courgette chips - 1 lb. of zucchini, Italian seasoned Panko bread crumbs, a couple of eggs, and some grated parmesan cheese. (Substitute for Italian-style panko bread crumbs: add 1/2 tablespoon of Italian seasoning, 1/2 tsp. garlic powder, 1/2 tsp. Kosher salt, and 1/4 tsp. onion powder to 1/2 c. plain panko bread crumbs.)
