Baked Zucchini Fries, serves 2, adapted from Une-deux senses 2 medium zucchini, sliced into sticks 1 large egg white 1/3 cup seasoned bread crumbs 1/4 tsp. garlic powder (optional) cooking spray salt and fresh pepper In a small bowl, beat the egg whites and season with salt and pepper. In a ziplock bag, place the breadcrumbs and garlic powder; shake well. Spray a cookie sheet with cooking spray and set aside. Dip the zucchini sticks into the egg and then place into the bread crumb mixture, a few at a time and shake to coat. Place the breaded zucchini in a single layer and spray more cooking spray on top. Bake at 400 degrees for 20 - 25 minutes, or until golden brown. Serve with some marinara sauce for dipping.

Powdered Egg Replacer (Compare to Ener-G®) - Whole New Mom. Uses potato and tapioca starch, baking powder (recipe for homemade), and baking soda.
EGG REPLACER. This recipe is for everyone – whether you, or someone you know, has a food allergy, or if you have ever run out of eggs while in the middle of a recipe. Great for full egg, yolk, or fluffy egg whites.
POWDERED EGG SUBSTITUTE (works just like Ener-G): 2 1/2 C potato starch, 1 1/2 C tapioca starch, 2/3 C baking powder, 1/3 cup baking soda. Cook recipe ASAP after adding egg replacer.
Powdered Egg Replacer Ingredients Makes the equivalent of approx. 45 – 50 eggs 2 1/2 cups potato starch 1 1/2 cups tapioca starch (see other starch options below in Notes section) 10 Tbsp plus 2 tsp baking powder (See MYO Aluminum & Corn-Free Baking Powder) 5 Tbsp plus 1 tsp baking soda Method 1. Place all ingredients in a bowl. 2. Combine well. 3. Store in an airtight container. Notes -Rinsing the spoon off after using this replacer gets tedious really fast. I leave a 1/2 Tbsp spoon in my container at all times. See my post on Saving Time with Measuring Tools. -I recommend putting a little card with the measuring instructions on the outside of your Powdered Egg Replacer container so that it will always be handy when you need it ! -You should always get whatever you are making into the oven or onto the stove as soon as possible after mixing in the egg replacer. It tends to lose its effectiveness the longer you wait (due to the leavening agents in it). -To substitute for 1 egg, use 1 rounded 1/2 Tbsp egg replacer powder and 2 Tbsp (1/8 cup) water (filtered water preferred). -If your recipe calls for egg whites beaten stiff, beat the egg replacer powder with water until stiff (this won’t work for heavily egg-white-based dishes like meringues, however. Believe me, I learned this the hard way with a meringue that wasn’t, um, a meringue .) -For recipes calling for egg yolks, use 1 rounded 1/2 Tbsp egg replacer powder with 1 Tbsp water. -You can substitute cornstarch or arrowroot for the tapioca starch with I think minimal difference. You could also sub out the potato starch, but it is a bit “heftier” than the other starches so I would use it if you can. You could also use white flour for either, but then your egg replacer will not be gluten free.
This Homemade Powdered Egg Substitute (potato starch, tapioca, baking powder-use one w/allowed grains, baking soda) is great for those with egg allergies, but also great when you've run out of eggs. Works just like Ener-G.
