red lentil coconut soup--Pinner says: I made this last night, it was delicious!! I didn't have the red peppers so I made it without them, this will definitely be hitting the regular rotation...most of the ingredients can be found in my pantry anyway, so stock up on some of the staples of this recipe and keep it in your back pocket when "there's nothing to make" But whatever you do, you have to try this soup!!!
Crean of Tomato Soup: This recipe is based on Deborah Madison's Cream of Tomato Soup from Vegetarian Cooking for Everyone. I've made this recipe dozens of times as is and have increased the recipe times twelve to feed fifty people with much success. It's a real crowd pleaser, especially if served with grilled cheese sandwiches.
Tuscan Bean Soup from Pioneer Woman - I made it in the crock pot. Used chicken instead of shrimp, home canned tomatoes and dried basil instead of fresh. It was lacking something, so I added the rest of the can of tomato paste, a blob of chicken soup base and some poultry seasoning. It also needed the parmesan cheese at the end to keep it from "missing something".
