Too rushed for frosting? Place a large marshmallow on each cupcake five minutes before they finish baking. It will melt and make a yummy toasted marshmallow topping. (Must try this.) (Sounds good on Chocolate Cupcakes!)
Rainbow Spatter Cupcakes! Using white cake mix, make batter as directed. Use several plastic (or glass) cups, pouring white batter in them, divide between all cups. Add food coloring to each cup for the colors desired. Mix each cup and then put a little of each color in each muffin cup in small blobs. Then drizzle other colors over the blobs. Bake as directed.

Holy oh my! Mini Cinnamon Rolls - Flatten Crescent rolls; cover with butter, cinnamon, and brown sugar; roll into log and slice into mini rolls; place in muffin pan; bake 8 to 10 min. or until golden brown. Icing: 3/4 cup powdered sugar; 1 tbsp skim milk; 1 tsp maple syrup.
