Spinach, White Bean and Turkey Sausage Soup: nice lunch with a little kick. Not many changes - used chicken instead of turkey sausage, increased the red pepper flake to tsp, reduced the oil to tbsp, left out both the rind and lemon. 3 servings each.
Quinoa White Chicken Chili: I thought this was a little bland but my husband really liked it. I think I will try a different salsa verde next time. I did make it in the crockpot...high for 4 hrs. It was not at all spicy so jalapeños might have been duds.
