Toss chopped peppers, potatoes, zucchini, red onion and sausage with olive oil, salt, pepper and garlic powder. Seal in an aluminum foil pouch and bake at 400 for 40ish minutes. You can also grill this. We ate it for dinner last night and it was really good. Super easy to prepare and cleanup! Will make again!
Ingredients 1- 15 oz can corn 1 can black beans 2 avocados (cubed) 2/3 cup chopped cilantro 8 green onion stalks, sliced 6 roma tomatoes Dressing: 1/4 cup olive oil 1/4 cup red wine vinegar 2 cloves minced garlic 3/4 teaspoon salt 1/8 teaspoon pepper 1 teaspoon cumin Mix first 6 ingredients together. Combine dressing ingredients and pour over corn mixture. Serve with tortilla chips.
Slice potatoes (2lg) into very thin slices (1/4 inch). Toss potatoes in (3Tbsp) olive oil, Italian seasoning (1tbsp) and salt (1tsp) in a ziplock bag to coat. Place in a single layer on a baking sheet lined with foil. Bake at 450 for 15 -20 minutes, until lightly brown. Top with Parmesan cheese and bake an additional 5 minutes.
These Grilled Foil Ranch Potatoes are a regular dish for us in the summer time. I love how you can customize these based on your own personal preferences. We toss all the potatoes with the ranch mixture then divide the potatoes out onto individual foil pieces and top them the way we want them. Some topping ideas are bacon, ham, sausage, onions, peppers, broccoli, and any kind of cheese.
